Sheer khurma, a delightful dessert that originates from the Middle East, is a symbol of joy and celebration. Made with a combination of milk, vermicelli, and nuts, this sweet treat is perfect for any festive occasion. Whether you are preparing it for Eid, a wedding, or simply to satisfy your sweet tooth, here is a step-by-step guide on how to prepare sheer khurma.

Ingredients

Before you start preparing sheer khurma, gather the following ingredients:

– 2 liters of milk
– 1 cup of vermicelli
– 1/2 cup of sugar
– 1/2 cup of almonds, chopped
– 1/2 cup of pistachios, chopped
– 1/4 cup of cashews, chopped
– 1/4 cup of raisins
– 1/4 cup of dates, chopped
– 1/4 cup of saffron threads
– 1/2 teaspoon of cardamom powder
– 1/2 teaspoon of rose water
– A pinch of salt

Instructions

1. Begin by boiling the milk in a large pot. Keep stirring the milk occasionally to prevent it from sticking to the bottom. Once the milk starts boiling, reduce the heat to a simmer and let it cook for about 30 minutes. During this time, the milk will start to thicken.

2. While the milk is simmering, prepare the vermicelli. In a separate pot, bring water to a boil. Add the vermicelli to the boiling water and cook for about 5 minutes. Drain the vermicelli and set it aside.

3. In the same pot where you cooked the vermicelli, add the chopped nuts, raisins, and dates. Cook them for a few minutes until they are slightly roasted.

4. Once the milk has thickened, add the saffron threads, cardamom powder, and salt. Stir the mixture well to combine the flavors.

5. Add the cooked vermicelli to the pot and mix it thoroughly. Continue to cook the sheer khurma for another 10 minutes, stirring occasionally.

6. Reduce the heat to low and add the sugar. Stir the mixture until the sugar dissolves completely.

7. Finally, add the roasted nuts, rose water, and chopped dates. Mix everything well and let the sheer khurma simmer for another 5 minutes.

8. Once the sheer khurma has reached the desired consistency, turn off the heat. Let it cool down slightly before serving.

9. Serve the sheer khurma hot or cold, garnished with extra nuts and dates.
