Instructions

1. Preheat your oven to 400°F (200°C). Place the fresh tomatoes on a baking sheet and sprinkle with salt and pepper. Roast for about 20 minutes, or until the tomatoes are softened and lightly charred.

2. While the tomatoes are roasting, heat a large pot over medium heat. Add a tablespoon of olive oil and sauté the diced onion until it is translucent, about 5 minutes.

3. Add the minced garlic to the pot and cook for another minute, until fragrant.

4. Remove the roasted tomatoes from the oven and let them cool slightly. Once cooled, peel the skin off the tomatoes and chop them into small pieces.

8. Return the pureed soup to the pot and season with salt and pepper to taste. If you prefer a richer soup, you can add 1 cup of heavy cream or half-and-half and stir it in.

9. Heat the soup until it’s hot, but not boiling. Serve immediately, garnished with fresh basil or a swirl of cream on top.
