How to Make Chole: A Spicy and Rich Indian Dish

Ingredients

– 1 cup of chickpeas, soaked overnight and drained
– 2 tablespoons of oil
– 1 teaspoon of cumin seeds

– 2 cloves of garlic, minced
– 1 inch piece of ginger, minced
– 1 green chili, slit
– 1 teaspoon of coriander powder
– 1 teaspoon of turmeric powder
– 1 teaspoon of red chili powder
– 1 teaspoon of amchur powder (dried mango powder)
– 1 teaspoon of garam masala
– 1 teaspoon of salt
– 2 cups of water
– Fresh coriander leaves for garnish

Instructions

1. Begin by pressure-cooking the soaked chickpeas with 1 cup of water for about 10-12 minutes. Once cooked, set aside and let them cool slightly.

2. In a large pot, heat the oil over medium heat. Add the cumin seeds and allow them to splutter for a few seconds.

3. Add the chopped onions and sauté until they turn golden brown.

4. Add the minced garlic, ginger, and green chili. Cook for another 2-3 minutes until the raw smell disappears.

5. Now, add the coriander powder, turmeric powder, red chili powder, and amchur powder. Stir well and cook for a minute to release the flavors.

6. Add the cooked chickpeas to the pot, along with 2 cups of water. Mix well.

7. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes. Stir occasionally to prevent sticking.

8. Add salt to taste and garam masala. Let the chole simmer for another 5 minutes.

9. Once the chole has reached the desired consistency, turn off the heat and garnish with fresh coriander leaves.

10. Serve hot with steamed rice, naan, or roti.
