Pour the strained apple juice into a glass jar, leaving about an inch of space at the top. Add one to two tablespoons of yeast (such as bread or wine yeast) and one to two tablespoons of sugar. Stir the mixture well, then cover the jar with a clean cloth and secure it with a rubber band or string.

Step 5: Ferment the Apple Juice

Place the jar in a dark, cool place with a consistent temperature between 70 to 80 degrees Fahrenheit. Allow the mixture to ferment for about two weeks, stirring daily. During this time, the yeast will convert the sugars in the apple juice into alcohol, which will later be converted into vinegar by acetic acid bacteria.

Step 6: Add Acetic Acid Bacteria

After two weeks, add one to two tablespoons of apple cider vinegar to the jar. This will introduce acetic acid bacteria, which will convert the alcohol into vinegar. Replace the cloth and secure it again, then let the mixture ferment for an additional four to six weeks.

Step 7: Bottle and Store

Once the apple cider vinegar has reached your desired strength, strain it through a cheesecloth or fine-mesh strainer into a clean glass bottle. Secure the lid tightly and store the vinegar in a cool, dark place. Your homemade apple cider vinegar is now ready to use!
