Ingredients

Before we get started, gather the following ingredients:

– 12 lasagna noodles
– 2 pounds of ground beef
– 1 large onion, diced
– 2 cloves of garlic, minced
– 1 can (28 ounces) of crushed tomatoes
– 1 can (15 ounces) of black beans, drained and rinsed
– 1 can (15 ounces) of corn, drained
– 1 cup of shredded cheddar cheese
– 1 cup of shredded Monterey Jack cheese
– 1 teaspoon of ground cumin
– 1 teaspoon of chili powder
– 1/2 teaspoon of smoked paprika
– 1/2 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1/4 teaspoon of cayenne pepper (optional)
– 2 tablespoons of olive oil
– 1 cup of sour cream
– 1 cup of salsa
– Fresh cilantro, chopped (for garnish)

Instructions

1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or cooking spray.

2. Cook the lasagna noodles according to package instructions. Once cooked, drain and set aside.

3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

4. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.

5. Stir in the crushed tomatoes, black beans, corn, ground cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.

6. Spread a thin layer of the meat sauce at the bottom of the greased baking dish.

7. Place a layer of lasagna noodles over the sauce, covering the entire bottom of the dish.

8. Sprinkle half of the cheddar cheese and Monterey Jack cheese over the noodles.

9. Spread half of the meat sauce over the cheese layer.

10. Repeat the layers, starting with the lasagna noodles, then the cheese, followed by the meat sauce. Top with a final layer of noodles, cheese, and meat sauce.

11. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

12. Let the Mexican lasagna cool for a few minutes before serving. Garnish with chopped cilantro and a dollop of sour cream and salsa on top.

Now you can enjoy a delicious Mexican lasagna that will leave everyone asking for seconds! ¡Buon appetito!
